I always visit Bartaco whenever I am back home. It’s become a total tradition with my advisory fam, Darren and JB.
Well, during my last visit, I realized something absolutely shocking: Bartaco doesn’t really have cheese.
I love the entire setup of Bartaco, especially how easy their online menu is to navigate. Because it’s so seamless, I have literally clicked on every single button just to make sure I’ve seen all my options before ordering. Along the way, I stumbled onto the kids’ menu and discovered they offer a quesadilla. The second I realized it existed, I had to order it—and it has been a staple in my rotation ever since.
During this last trip, the puzzle pieces finally clicked. I only order that kids’ quesadilla because it is my subconscious cheese fix. Bartaco’s actual tacos do not have cheese. It is pure insanity—no queso dip on the menu, and no shredded cheese on the tacos!
Now, I am not a massive cheese girl. You will never catch me eating cheese by itself; it always has to be melted in something or melted on something. Ordinarily, a taco without cheese feels morally wrong. But when I actually visualize the specific tacos I order at Bartaco, adding cheese to them wouldn’t feel right either.
I honestly don’t know how to feel about this. It is deeply impressive that their food is so incredibly good that they managed to trick us all into forgetting cheese even exists.
